The Italian word ‘passata’basically means ‘sieved’. La BIO IDEA Passata contains sun-ripened tomatoes, picked at their optimum ripeness and taken immediately to La BIO IDEA’s factory to be sorted, sieved, steralized and bottled. Passata is the ideal base for tomato sauce or soup. For Passata Rustica a coarse sieve is used, the cooking time is shorter and the Passata has more texture.
